Snowflake Quesadillas

One of my kids favorite things to do in Winter is make paper snowflakes.  They make them by the hundreds and hang them everywhere.  For lunch the other day we decided that we would try making our quesadillas into snowflakes and it worked!

I don't know why my computer, or maybe it's blogger, keeps flipping my images.  I have tried everything.  Does anybody know how to fix this?

Here's what we did.  First clean a pair of kid friendly scissors (or kitchen shears if you have them) so that they are nice and sanitary.  Give each child a FRESH tortilla.  Stale ones will just break into pieces.  Fold into half and then half again.  Have the kids cut large shapes out of the sides, leaving some connecting pieces. (If you are not familiar with making paper snowflakes, you may want to practice with paper first.)

Butter another tortilla that hasn't been cut and place it butter side down on a heated skillet.  Sprinkle with shredded cheese and top with the cut snowflake tortilla.  Toast for a couple of minutes until the cheese is melty.  You can then flip the quesadilla over and the cheese shouldn't fall out on the skillet if it melted enough, then toast for a couple of seconds until browned.

Serve with salsa and sour cream!
Ready to flip.


THEN, here is the best part.  Take all of the cut out pieces and put them in a ziplock back and toss with melted butter, then lay them out on a cookie sheet.  Sprinkle with cinnamon sugar and broil for a couple of minutes until browned.  And now you have yourself a nice dessert!

Winner, Winner, Chicken Dinner & A Month Supply of Fruit Snacks!


I just found out a couple of weeks ago that I was one of ten runners-up in the Welch's Fruit Snacks Lunch Box Notes contest.  The prize is a $200 gift certificate to the restaurant of my choice and a month supply of fruit snacks!  We are super excited!  Thank you Welch's.

Jack-o-lantern Sandwiches

My mom bought these awesome cookie cutters that had a large pumpkin and then various cutters for different mouth and eye combinations for a jack-o-lantern.
She bought some orange bread that she found at a bakery and cut out different faces for each sandwich. They turned out so cute. I think green bread for some Frankenstein sandwiches would have also been so cute.
I would imagine that you could make your own colored bread with any homemade bread recipe by adding coloring to the dough.
These were a huge hit!
For a side garnishment, we used other Halloween shapes to cut out pieces of cheese. And a special shout out to Aunt K, who dipped Nutter Butters in white chocolate melts and added two little chocolate chip eyes to make the most adorable little ghost cookies. The kids loved it all!

Dog Food

Saturday night, we found ourselves on our own when Z left us for a couple of hours to go to Priesthood meeting. So we checked out Marmaduke, which is an adorable flick about a rambunctious dog and we ate our dinner in doggie dishes on the floor in the living room (on a blanket of course).

Even though it was just a boring old peanut butter sandwhich, we cut them out with the dog bone cookie cutter and everyone thought it was the most exciting meal I cooked all week.

Flower Hot Dogs

A fun way to snaz up a hotdog. Flower hotdogs were my favorite when I was a kid, and I am always surprised at how many people don't know about this simple little trick.

Get yourself a raw hotdog

Then using a butter knife, make a slit in the hotdog about every half-inch. Be careful not to cut all the way through.

It should look like this when you are done.

Microwave for 30-45 sec. It will curl itself up. (If it doesn't you can help it.)
And, voila! You have yourself a flower. Just add ketchup, mustard, and whatever else would cute this baby up.
