Fireworks Pancakes

 I know that I am totally a month late in posting this little gem, but the summers get a little hectic around here, so at least you can use this for next year if you like it!

We love pancakes at our house, and we love food coloring at our house, so this one was a no brainer...
 First, you make the pancake batter as you normally would do, and pour it onto the hot griddle.  IMMEDIATELY, use various colors of food coloring to add dots of color all over your pancake.
Next take a toothpick and drag it through the colors until you have made your fireworks to your liking!


When they were finished cooking, I gave the kids some colored sugars to add some razzle dazzle to their fireworks display.  These were a huge hit!  Fun to make and fun to eat!

Personalized Peanut Butter Pancakes


This idea came from the Bisquick Cookbook. It is always a huge hit with my kids. You can also just do this with regular pancake batter, but we like the flavor of the peanut butter pancakes.
PERSONALIZED PEANUT BUTTER PANCAKES
Peanut Butter Maple Syrup (see below)
2 Cups Bisquick
1 3/4 Cups Milk
1/2 Cup creamy peanut butter
2 Eggs
1. Make Peanut Butter Maple Syrup; keep warm. Heat griddle or skillet; grease if necessary.
2. Stir Bisquick, milk, peanut butter, and eggs until blended. Pour about 1/2 cup batter into a plastic squeeze bottle with narrow opening. Squeeze batter from bottle onto hot griddle to form a letter. (Make letters backward so they will appear "right" when pancakes are served.)
3. When bottom side of letter is brown, pour 1/4 cup batter in circular motion over letter to form pancake. Cook until edges are dry. Turn; cook until golden brown. Serve with syrup.
PEANUT BUTTER MAPLE SYRUP
1 cup maple flavored syrup
3 Tbsp creamy peanut butter
Heat ingredients to boiling over medium heat, stirring frequently. Boil and stir 3 minutes.

Gingerbread Man Pancakes

Who says gingerbread men are just for Christmas time?

GINGERBREAD MAN PANCAKES
4 Eggs
1/2 Cup Sugar
1/2 Cup Molasses
1 Cup Buttermilk
3 Cups Flour
2 teaspoons ground ginger
1 1/4 teaspoons cinnamon
1 teaspoon ground cloves
1/4 teaspoon salt
2 teaspoons baking soda
2 teaspoons baking powder
1/2 cup butter melted
1/2 cup - 1cup milk
Whipped cream, fruit, chocolate chips, and other garnishments optional

1. With electric mixer, beat the eggs until they're light and fluffy, about 2 minutes. Add the sugar, molasses, and butter milk and mix until blended about 1 minute more.

2. In a separate bowl, sift together the flour, spices, salt, baking soda, and baking powder. Add the dry ingredients to the egg mixture and stir until smooth. Stir in the butter. Gradually, add milk until pancakes are to desired consistency.

3. Pour a circle for the head, a circle for the body and four small circles for hands and feet. Cook on a pancake griddle over low heat until golden brown. Decorate and serve with maple syrup if desired.
